Sweet Sweet Apple Pie

Fall is here and it’s finally pie season. I went apple picking for the first time this year (yeah I know, I am not sure how this never happened earlier either) and of course I had to find creative ways to use the 20 pound bag of apples we carried home. After days of apple salads/ sad desk lunches, I decided to turn to desserts.

I got the idea from a friend who posted about her apple dessert on Instagram, and used the same recipe she found here. My pie crust (and all the other ingredients) are from Trader Joe’s, and I used an 8” cast iron skillet instead of a 9” pie plate. I used a variety of apples since the recipe didn’t specifically called for a particular kind. While I was waiting for my pie crust to defrost on the counter top I actually put the apple mixture into the fridge for a good 30-40 minutes to prevent the pie from becoming soupy. I went for the lattice like my friend did, and you’ll have some pie crust left over if you want to use for a mini tart or other yummy treats. The pie turned out perfect and our four legged friends can’t stop staring!

P.S. This cast iron skillet is a really good deal from Amazon! I’ll be sure to keep experimenting with this $10 buy!
